The organic based coffee company is nestled between the suburban city of Meridian. The Mindful Coffee shop serves as the neighborhood go to spot for organic specialties and seasonal milk based drinks. Mindful Coffee Co. makes the most of their spaces  by combining industrial themes with hometown coffee shops. Proximity to suburban neighborhoods becomes the shop’s strength and weakness depending on the perspective. The shop gets busy fast, and with limited seating options, it is often difficult finding a seat. With the industrial style, noise can also be an issue, there are limited items to absorb sound, making it very easy to hear everyone else’s conversation but hard to hear your own. Your experience may differ depending on the day and time. 

Mindful Coffee Co. Servers there own coffee beans, roasted out of Minneapolis. Today I tried their medium roast blend in a doppo. The first couple sips of this coffee took me by surprise. Recently, the coffee i have been trying has been acidic forward or a nice balance. Mindful medium roast had little to acidity up front, but followed by deep bitterness expressed chocolate. I did however get notes of spice, Nutmeg,cinnamon and All spice. They do not mention where the beans are from, but based on those tasking notes I could assume its blend includes south/central america . ( My ability to determine where a coffee comes from based on taste only is a skill in training). There coffee was nothing out of this world but also not a slouch. It serves the job well and meets a need that the neighborhood was needing. 

Like most of my coffee shop experience I paired it with pumpkin bread ( ate it so fast I forgot to take a picture) . This was a fantastic pumpkin bread, forward pumpkin flavor flowed by sugar cinnamon and clove. If the colder weather was not an indicator that fall was here, the increase in pumpkin drinks and pastry should. The bread was not to dry either, a good balanced between and great soft bread like texture that would expect out of a pumpkin bread. 

If you are in the Meridian area, this for sure is worth a stop. Stop by and try the organic fair trade drinks and pair it with one of there in house made pastries.
